FSSAI to set re-use guidelines for cooking oil

The Food Safety and Standards Authority of India (FSSAI) will soon be issuing new guidelines for reusing cooking oil for eateries. The new standard is likely to be called ‘total particulate matter’ and is expected to be launched in next 1-2 months.

The regulatory body will conduct a pan-India survey to understand the average standards of polar compounds present in cooking oil. Polar compound is the residue in oil after usage. FSSAI is likely to be set at 25 percent limit on these compounds, sources say. Globally, the average limit on polar compounds is bin range of 22-25 percent.
